Steak Brunch Burritos! Perfect for family brunch o Steak Brunch Burritos! Perfect for family brunch or even weekly meal prep. Makes 5 large burritos. 1 pound of thin sliced ribeye 1tbsp of steak seasoning 5 eggs 1 green onion chopped 5 oz of cheddar shredded Large tortillas (you can use lavish bread here to lower calories) Half yellow onion chopped 1.5 cups of gold potatoes chopped into bite size pieces I cooked the potatoes in the air fryer at 400 for 20 minutes but you can do the same in the oven. Season steak and sear in a pan. Remove and add your onions and potatoes. Cool until onions get slightly soft. Add your egg and green onion. Cook until the eggs are softly scrambled. Remove from heat. Chop up your steak and add to the skillet. Warm your tortilla and add 1/5 of the mix to the middle. Cover with 1 oz of cheese and wrap. I pressed them on the skillet for about 30 seconds to melt the cheese. Serve with salsa or your favorite hot sauce!
